This is a nutrient dense salad made with both roasted and raw vegetables. You can substitute any vegetables you have on hand. This salad makes a great side dish or, if you want a light meal, add lettuce and a protein to make a filling lunch or dinner salad.

For my salads I always make the dressing first so that it gives the dressing a chance to infuseĀ its flavors.

Prep Time: 20 minutes
Roasting time: 15-20 minutes
Serves: 4

Balsamic Dressing

Ingredients
Ā¼ cup balsamic vinegar
1/8 cup real maple syrup
1 teaspoon Dijon mustard
2 cloves of garlic, minced fine
Ā½ cup olive oil (I use extra virgin)
salt and pepper to taste

Combine all ingredients in a bottle and shake, or combine in a bowl and mix very well with a fork or whisk. Store any leftover dressing in the refrigerator for future use.

Ingredients

16 ounces brussel sprouts (can be kept whole or cut in half)
2 large yellow zucchini, sliced in Ā½ā€ pieces
8 ounces cherry tomatoes, halved
8 ounces of mozzarella cheese, cut into bite size pieces
1/8 cup olive oil
Ā¼ teaspoon of garlic powder
1/8 cup fresh basil, thinly sliced
Balsamic dressing

Directions
Preheat oven on broiler setting and arrange the oven rack to be closest to the heating element. In a large mixing bowl, combine brussel sprouts, yellow zucchini, olive oil, salt, pepper and garlic powder and mix to coat. Pour coated vegetables in roasting pan lined with aluminum foil and arrange in a single layer. Roast until vegetables are a deep golden brown, about 15 minutes. Take out of oven and let cool completely.

One cooled, mix roasted vegetables, tomatoes and mozzarella cheese Ā in a large bowl. Pour enough balsamic dressing to coat well and top with sliced basil.

Salad is best eaten at room temperature.
